On the other hand, fresh fruit and vegetables are usually picked when they are unripe. They are then ripened during transportation and this usually doesn’t give them time to fully develop and mature. They contain a higher percentage of lectins which many people react to.
Frozen fruits and vegetables are great to consume and usually cheaper in price. The nutrients in them are retained and maximised early on as they are frozen. Freezing is a good way to preserve the nutrition in fruits and vegetables, so long as it is early on in the process. Leaving fruits and vegetables to sit for hours and then freeze will not fix the problem.
Frozen fruits and vegetables are great for many dishes such as smoothies and baked goods.
